This past weekend I tackled a pie from my list of twenty. Though this breakfast pie had a few flaws, the flavor was amazing and had everyone coming back for seconds.
The yogurt cream cheese filling of this pie had the most delicious flavor and when mixed with the bottom layer of jam, it was like a dessert yogurt parfait.
The one trouble I ran into was getting the granola crust out of the pan. Since it was a cold set pie, I think the granola got a little attached to the pan and it took lots of work to pop it out. It ended up being more like granola chunks on top of the pie filling but it was still amazing!
Somehow we had leftovers so I popped them into two small containers and they made for a perfect breakfast the next day. The yogurt got a little bit thicker and the fruit didn’t get soggy at all. Definitely recommend trying it if you have leftovers!
Overall, this pie is perfect for a family brunch and easy to whip up in advance! The flavors are on point and definitely worth making.
