If you are looking for a way to use up some produce or just feeling supremely lazy and need a way to entertain yourself, these White Chocolate and Raspberry Cupcakes are meant for you. While I wouldn’t necessarily classify them as cupcakes, their sweet and moist cake is absolutely delicious.
These “cupcakes” have always held a nostalgic place in my heart. I have fond memories of my Mom making them and putting them in my lunch box when I was in elementary school and me gobbling every last bit of them up. Now that I am older and baking them myself, their sweetness sometimes seems a little bittersweet because I know I will only have so much more time with my Mom before I leave for college.
While this isn’t the first time I have made or tasted this treat it is a fun memory I wished to share. Whether it’s for breakfast, after school, or for a late night snack, these “cupcakes” always hit the spot and warm my heart. I hope you enjoy the simplicity and flavors of these as much as I do.
